Cooking with Honey


Baking with honey:

Honey helps in baking because it and retains moisture. Breads and cake stay fresher longer when baked with honey. Honey also reduces crumbliness in cookies and bisuits.

Substitututions:
Use the same amount of honey as sugar and decrease the liquid by 1/4 cup (50 ml) for each cup (250ml) of honey used.
Reduce oven temperature by 25 degrees F(10degrees C) to prevent over browning.
When substituting honey in non-baked goods rememder it has more sweetening power than sugar.

Measuring Honey:
For easy removal, coat the measuring cup with vegtable spray before pouring in the honey to measure. Rinsing the cup or spoon with hot water first also works well.
